I have a similar issue.  Running F25 with nVidia HW and the nVidia
drivers from rpmfusion. 

Sometimes the display settings doesn't "show" the monitor but it is
actually hidden behind the other monitor in that GUI and I can see it is
there when use xrandr.  I can get it back using a series of xrandr commands.

At other times it isn't shown.  But just pulling the plug from the video
card and reinserting brings it back for me.
