Did it leave the blacklist stuff on the kernel command line that turns nvidia completely off? (I think it has 3 parameters it adds, something like nouveau.modeset=0 rd.blacklist=nouveau video=vesa:off). Or perhaps, like me, you have a maxwell card which won't work at all with nouveau - in that case you can get it to boot with vesa video by using all the above kernel parameters, but saying video=vesa:on (instead of off).
