Hello James,
I would recommend you to start with any GNU+Linux manual (as 90% of what you will learn there will apply to Fedora) to then learn the specifics about the RHEL family.
A good starting point would be to define some projects (like 'put together a home server'), set some goals ('configure NFS and Samba for file sharing') then have fun while pulling your head's hair along the way, hehe.
Be sure to hang at Fedora's IRC channel, it's a nice place to ask and share experiences.
