This is incredibly non-obvious, unfortunately, but you can set any arbitrary color by bringing up the Colors table under backgrounds, and then running Gimp or another GTK app with a color picker dialog and dragging the color from that to the table. I don't really understand why there isn't just a color picker there in the first place.
