iIssue is resolved, turns out it was a faulty cable. The connection sometimes toggled between 100Base-T and 1000Base-T (with happy errors), and this obviously makes systemd stop mounting the nfs drives. Turns out, mount -a on running system took a long time (10s for 4 shares, <1s is normal) but worked nevertheless.
