As a matter of interest, what happens if in /etc/sysconfig/network-scripts you write ifcfg-enp2s0, say, as DEVICE=eth1 TYPE=Ethernet ... ? I did this by mistake and the interface seemed to be called eth1, in some places at least. I changed it when I saw my mistake, so I don't know how it would have worked.
