Yes, the example I gave was KDE specific.

However, I believe you can do something similar in MATE.    (I'm not a MATE user and just played with it a bit on a system with only one WiFi interface).

You can create a connection for each interface/device.  In the connection editor you select the tab "WiFi" for each connection you've created and choose the individual "Device MAC Address" (one for each interface).  Then you can choose which one to connect to.

You can even go so far as to use the "General" tab and tell one to connect automatically and the other not.
