Hi Ed,
I've just followed your answers in the "evince" thread:
In my case, I think the problem is due to evince that uses the wine-symbol fonts from the wine-symbol-fonts package.
Also, as for you, xpdf and acroread work like a charm (since they use other fonts).

I try to remove these fonts, hoping that wine continue to work anyway.
