I've not thought about it....  But, "man mcelog" reveals...

       When  the  --logfile=file  option  is specified append log output to the
       specified file. With the --no-syslog option mcelog will never  log  any‐
       thing to the syslog.

So, maybe you can create a modified service to do what you want?
