fedora18 and ipods/iphones

Hello, I am new to linux and this mailing list.

After years of frustration and discomfort with Windows I finally
switched over to linux. Hallelujah.

Unfortunately I own some apple hardware. I have an iphone3 and an ipod
touch4g. I am not fond of either, but until I do the research and have
the cash to switch over to an Android I will be relying on these devices
for communication. I have an extensive contacts list on my iphone and
I'd like to import it into my evolution email client.

Does anyone have a strategy on how to access data on these mac devices? 

Ideally I'd like to have my laptop read them as mass storage devices.

I have read a little about the evasi0n jailbreak that is available. Has
anyone jailbroken one of the divices listed above? Did doing so make the
divice more compatible with linux (specifically f18).

I am running kernel 3.8.11-200.fc18.x86_64
