Please read the manual pages (with the man command) before asking people to
explain well documented features. In this case "configure" is a verb, something
you should do after reading the man pages, not a Linux command.
$ sudo configure /etc/idmapd.conf
sudo: configure: command not found
As a user:
man sshfs
I installed the fuse-sshfs package for this. But am not sure: should I
mount as before again?
You should read the manual page on sshfs (man sshfs) and use it as explained
there. Note that this doesn't require any export from the host, so it offers at
least a way to get to your data.
