I had to "rm /etc/grub2.cfg" and "ln -sf /boot/grub2/grub.cfg /etc/grub2.cfg" to get grub2 updates to the correct cfg file.
Perhaps there's a more correct way of doing that but that's how I fixed it.

I re-run grub2-mkconfig -o /boot/grub2/grub.cfg and it seems to have
fixed it.
