Seems Gnome has made such things far more difficult. I don't have F18 installed yet, haven't had time.
But I did a yahoo search for "Fedora 18 change icon size" and found this:

Thanks Joe! But I've already checked those places.....they were the first places I checked.....I wonder if there's some sort of "add on" that can be installed for Gnome that would allow this?.....
