I use KMail accessing mail on an IMAP server.
In my case I can choose the Trash folder,
by going to KMail=>Settings=>Configure KMail=>Accounts,
then highlighting the appropriate account,
and clicking on Modify=>Advanced,
where there is an option to choose the Trash folder.
