I finally found the answer with the right Google keywords.
It appears that the mime database just needed to be rebuilt.
The last update must have screwed it up.
I applied as root:
update-mime-database /usr/share/mime
chmod 664 /usr/share/applications/mimeinfo.cache
chmod 664 /usr/share/applications/mimeinfo.cache
Everything came back after logging out and back in.

Subject: Fedora 16 Lost File Associations
I applied an update last night and now most of the file associations are gone. Most icons are gone from the shell. The desktop background images are not recognized (I cannot even browse back to them, since it no longer recognizes any image formats (JPG, etc). I tried to open a JPG in image viewer and it won't.
Any help /advise would be greatly appreciated. I'm assuming it was a bad RPM in the updates. Am I alone or have others seen this?
