As it turns out, the simplest example worked well enough for me to boot into a current kernel with an initrd line, run grub2-mkconfig and get the newest two kernels added properly. (They had everything needed, they just needed to be added to grub.cfg.) There's still a few odd things going on, but I'm at least one step closer to having my desktop properly working again.
