the reviews for 3TB drives on newegg recently and they
make it sound very risky to try 3TB drives (or even
2TB drives).

They both appear to work just fine.   They are Hitachi Deskstar 5400 RPM 3TB drives.   About 2.7 TB of usable storage each after formatting.
