I partially agree with you. I selected "Always Ask" since in some
cases I just want to open a PDF file to have a quick look inside. ;)

Anyway, to overcome this issue I created an entry for PDF mime in my
own personal area:

$HOME/.local/share/applications/mimeinfo.cache

where I put this:

application/pdf=evince.desktop

Now all works right.
