I am confused... Once again, there's *no conversion*. The MDA will simply store the messages into a Maildir structure if you configure it to do so. In the case of procmail, you just create the Maildir structure for each user, as you mention above. Obviously you also have to get sendmail to use procmail as MDA. See the procmail(1) for more info on this. I don't use Dovecot so I don't know how it's LDA should be configured, but Google for Dovecot+maildir.
