When it is playing, you should have 3 icons on the right side for your application, with the down arrow icon being the one farthest to the right. Pavucontrol is for controlling the output of playing applications. There is probably a way to set it up before you start playing, but I have never needed it in the past. I just purchased a USB audio device so I could play with that aspect of PA. I also have to play with the network capabilities one of these days...
