This is because the CD uses a compressed file system. This works great for a Live CD where the only way to change things is to burn a new CD. (You can not write to the compressed file system. It also works well when you just need a small space for storage of your files. This works great for 2G and smaller sticks. When you start getting into larger sticks, it becomes possible to do a more normal install, with a limited package set.
