I used (from alsa-utils-1.0.19-4.fc11.i586):
alsamixer -c 0
It's a curses interface to all of the stuff that used to be accessible
through gnome volume control. '0' indicates sound card 0. If you have more
than one you might need to use a different number. Use '?' to get a list
of commands to use while running it.
