You don't have to remove the service if you don't want to run it.  Just
disabling it is enough and will not affect your system if using network
service.

I am wondering if it's NM/The UI (or at least the way it interacts with
the config files) that is the problem?  As in, if you try using
system-config-network-tui  it seems to write everything correctly and
not screw it up.
