Windows doesn't do software raid.
Even if you use hardware or mixed hardware/software raid, there are potential
gotchas that won't necessarily be obvious. You will need to carefully buy
hardware and then verify that things work as expected before using the
configuration for real.
It might be easier to have 4 disks and use two for each OS. Use hardware
or mixed hardware / software raid for Windows and software raid for linux.
