Find the application in the K menu, than right click and select "Add to
desktop".

Good question. I'm not only looking for it to hide but since I always use dual
head systems to span it. The current panel is too crowded in things to find
my way and I either need more panels or more space.....
I had a look at ~/.kde/config/plasma-appletsrc but don't realy see any options
for this.

In general I do miss some things in KDE4 that I had available in KDE3, but
perhaps it's just a mater of getting used to the new way of doing things.
What I miss most is the well working drag & drop from one konqueror window to
another directly onto a folder icon instead of first opening the folder.
Some actions require more handling, but I guess that with time functionality
will be improved.

Regards,
Marcel
