Assuming you want to boot from grub then you would still need to install it on the MBR of the drive you are booting off of and you could still edit the grub.conf file with your favorite text editor. The tricky part would be creating an entry for the other other system you want to boot. There is a way to chain boot where you point grub to the boot loader for the other os. I don't use this myself, so I don't have exact advice, but I have seen the documentation in grub.
