as root:
service yum-updatesd stop
chkconfig yum-updatesd off

will stop the daemon and prevent it starting at boot time.

You can get it to do yum updates for you automatically by configuring
/etc/yum/yum-updatesd.conf and leaving the daemon running.

Or you can update yourself manually using yum
