That'd be the first place I'd ask, the people you're renting it from. I know some just lease out the hardware, and you have to figure out how to use it yourself, but not all work that way. There is a website for dovecot, you could see if that helps you. I've only configured it for a single domain, not multiples (virtual, or real). http://www.dovecot.org/ Likewise, postfix has a website. You could see what information it has to help you out. http://www.postfix.org/ If you have SSH access to your machine, you should be able to configure them as you would on your own computer.
