I can't speak for split, as I've not tried it. But cat certainly does concatenate separate files together, whether they're text or binary. Given a directory of split AVI files like part001, part002, part003, etc., a command like "cat part* >> fullfile.avi" gives you an assembled AVI file. I've done that before, and it's worked flawlessly.
