A. Be sure that you actually under what you are doing - or things will start breaking... fast. B. Once you start using your own kernel, all problems/bugs/etc should go into bugzilla.kernel.org instead of bugzilla.redhat.com. C. At least in my experience the performance increase in rolling your own kernel was negligible.
