You probably want to look through your ~/.gconf* and ~/.gnome*
directories.

Log out, and then log in to a text-only console rather than graphically.
Now you can work on them without fighting against Gnome.  e.g. rename
the parent directories, and then log in again, as a brute force
method.  

Though, you'll lose other configurations if you move them all (such as
Evolution passwords and setup).  You might want to log out, move a few
things back, then log in again, until you sort out which bits you want
to lose and keep.

To see what a new user's look like, you can create a new user, log in as
them (graphically), and look through their home folder.
