I don't like having anything on my > desktop. Yes, it can be done within gconf (Gnome configuration editor). Tickboxes for the icons can be found in its /apps/nautilus/desktop branch of the tree. There's also a gTweakUI which'll put a Nautilus preference into your (Gnome) preferences menu, with a few tickboxes for that.
