I went (slightly paraphrased):

  mkdir /tmp/ff
  cd /tmp/ff
  tar xvzf the-tarfile.tgz
  mv firefox /opt/firefox-2.0.0.3-enGB
  ln -s /opt/firefox-2.0.0.3-enGB/firefox /usr/local/bin/.

Works fine. I also went into /opt/firefox-2.0.0.3-enGB/firefox/plugins
and duplicated the flash and java plugins links from our older firefox
install.
