You actually have to install some server config tool such as e.g. system-config-nfs (which I wanted). Then, you will have System -> Administration -> Server Settings with whatever server config tools you have. Kinda makes sense. That's why I don't trust guis, because if something goes wrong you have to dig under the hood.
