I find the System Rescue CD a handy tool for this.

I have not used it with LVM, but I think it has LVM support. You
have a lot of options there - everything from Midnight Commander to
copy files/directory trees to partimage to copy partitions. (You can
copy from one drive to another, as well as on the same drive.) It
also has the tools necessary to install GRUB on the new drive. Even
if you decide not to use it for this, it is worth having a copy
around...
