Since both distributions use essentially the same packages, just different versions, you can save all your configuration files, re-install, then replace the files with minimal change, if any, and have a CentOS system in a few hours.

Hint: You can force CentOS to upgrade a Fedora installation. "linux upgradeany" 
is your friend. But the CentOS version has to be significantly newer than the 
Fedora version for you to get away with this. FC4->CentOS5 will most likely 
work, FC5->CentOS5 might be problematic due to updates, FC6->CentOS5, 
FC4->CentOS4 etc. are all recipes for disaster.
