There's a gutenprint RPM for FC5 in the extras-development
repository.  You'll need to enable both "development" and
"extras-development" to get the RPM to install because it
needs the latest glibc from development.

yum --enablerepo=development --enablerepo=extras-development install gutenprint

extras-development is Extras for Rawhide, not Extras for FC5. It contains packages built against Rawhide since around the end of August. Whilst the majority of the packages there are FC6-compatible and some may even be FC5-compatible, they will move towards FC7-compatibility over the next few months (i.e. they may require more and more dependecies from Rawhide (such as glibc) as time goes on.
