That's usually done from the printer properties box, if you want flexibility. 
I have to say, though, that kprinter is much more flexible on this sort of 
thing than the gnome print app.

If you want it to always print only one side, then you can set that up in the 
cups gui, by using servername:631 in a browser window.  I have one remote 
printer, but it is set up to look like more than one.  The most-often used 
virtual printer prints double-sided, but I also have an instance set to print 
the highest quality onto gloss paper, single sided.
