Doing an NFS install does let you use the graphical installer. We use NFS installs daily. To do the graphical installer, 'linux askmethod' at boot time. The installer will handle that for you. I'm not sure anymore, but I believe the last time I read up on the installer, the NFS method would allow you to use the graphical installer whereas the FTP and HTTP methods would not. I could be wrong on that though, so corrections are welcome. And if you prefer the text mode install it's a moot point.
