Once the Live is running there's a shortcut to "Install to disk" or something like this. It's no necessary to boot with the DVD again.
If you're using the nvidia card, for sure, you're going to need the proprietary driver to get Gnome3 working.
Personally I think it's a good idea to skip Fedora 15 and going directly to Fedora 16.

The graphic issue could be related to the video driver not properly
loaded, there were some issues with Intel GMA cards and Fedora 15.
Have you tried to install once the Live is started?
Have you tried Fedora 16 DVD?
