If I understand what you are asking correctly, I am building from
the srpm, so I don't have a git repository to commit the change to.  I
haven't used mock to build a kernel, but I think if I was, I could do
exactly that, and of course that would be the way to go.  I haven't
switched because I have been building kernels this way for so long that
I hardly have to think about it, and using mock would require me to go
through a learning curve.
