You might try Edit->Preferences->Plugins->Notifications in Evolution,
though I suspect that turns off all notifications.

Alternatively, run gnome-control-center (Evo is a Gnome app) and
configure the settings under Notifications->Evolution.

If that fails, ask on the Evolution list.
