I've experienced the same thing on Fedora Workstation (GNOME). I tried exporting my resume to PDF (has links) and it came out empty, there were blue hyperlinks but no text. I don't have this issue anymore but it'd be interesting to know what causes this behaviour. My workaround at the time was to use the Flatpak version of LibreOffice. I'm guessing it happened to me because I installed KDE Plasma (but then removed it) and it might've pulled a dependency which affects LibreOffice's ability to export PDFs. This is just my hypothesis.
