put in a custom applications/mimeapps.list file (and 
applications/defaults.list for gnome apps) file somewhere where 
$XDG_DATA_DIRS environment variable looks

See /etc/kde/env/env.sh as an example.

I'd suggest considering adding your own script there to prepend a 
site-specific dir to XDG_DATA_DIRS and use that.
