I have installed Persian fonts. Is

default font? I can view and edit text using installed fonts, but I don't
know how I can specify a font to be the default one. (For example, in
desktop environments or widgets' captions.)

You can check /etc/sysconfig/i18n file
Also, try running gnome-font-properties and see if it helps :)
