I'm of the opinion that we should keep the blocker process unified
until and unless that becomes impossible. The only benefit I can think
of to separating them would be metrics, and I cannot measure the
degree to which I don't care about metrics :)

If the release dates of the products diverge, we might want to track which specific products are being blocked. That isn't happening now, but has been mentioned as a future possibility.
