I don't do EPEL myself as I have no EPEL environments in which to test anything and quite enough to do already with Fedora versions of things.
Given that mapnik tends to want fairly up to date versions of it's dependencies I imagine there is a potential for EPEL packaging of it to become somewhat troublesome.
