Probably just the tip of the iceberg - uuidtools requires rspec. Who knows what else.
My recollection is that ruby was getting pretty hard to maintain in EL6, so be prepared for a large undertaking.
As for how to do it - packagers need to step forward to unretire the packages in the EPEL6 branch, that's it.
