change time zone and jump package select

Hi all

1. Did anyone knows how to change default time zone America/New_York to other time zone on customize anaconda installatation?

2. how to hide/jump/disable Package select page on anaconda installation, because i just create single cd FC5 installation and do not need other package to selected
