What is on the other end of the spdif output cable?
  

It's a NAD T175.

I'm struck that the SPDIF In Status is 'Not locked' implying that the
onboard chip and outboard hardware are not in agreement on the exact
frequency. If you are driving a home theater receiver this could be
normal. If you are driving pro equipment then connect a spdif cable
back from the outboard equipment to your machine, assuming you have
access to the spdif in on this machine.
  

I don't understand why that should work. I don't think I can force my receiver to use a specific rate. But I'll give it a go.

There is the possibility that Alsa is reporting the wrong speed here...
  

That seems to be the case. It's still running at 48kHz. I was experimenting with the following setting: "options snd-intel-8x0 ac97_clock=41194" (without success). That was before I found out I'm actually using the via82xx driver and not the intel8x0 driver. After removing that setting it gives me the following output (SPDIF @ 48kHz):
